Roger Vergé knew how to gather qualified personnel around him who, in their turn, set up ship in the region. This is the case of Jean-Luc Gaufilier who has breathed life into this bijou address with a rotisserie, a terrace, palm trees and a view of Cannes and the Lérins islands. Chef Laurent Martinez cooks up market-based dishes such as chard and pinenut tourte, pumpkin risotto, braised pork cheeks served with a pleasant olive oil-infused potato puree and the plum clafoutis with pistachio ice cream, which give you a good idea of what’s on offer. The lunch menus are great deals.

Only one oil is on offer here, but it is genuinely different. Cold-pressed, full, sweet and fragrant, it has an incomparable artichoke bouquet. Suzy Seysson and Raymond Gonfond do splendid work.
