With great modesty, Jean-Marie Hirtzlin—who notably trained with Bocuse and Vergé—has returned from Riedisheim and the Tonnelle to the paternal inn and chosen to concentrate on a brilliantly simple regional cuisine. In the rustic dining room, his wife Martine extols his rabbit presskopf, fried carp, tête de veau and frozen rhubarb parfait.

Christian Bruls and Michel Felden run this easygoing chalet a step away from the ski trails. Michel manages the dining room with gusto, while Christian prepares his unfussy cuisine. Fondues, raclettes and chapeurade (meat in bouillon with grated vegetables) are served in the evening. At lunchtime, we make short work of escargots, cervelas sausage with vinaigrette, pork cheeks with Pinot Noir sauce and large grilled pork ribs served with a caramelized Chinese sauce.

In this family hotel in open countryside, nestled at the top of a hill in the Bruche valley, one can choose between one of the pretty modern rooms or an apartment in one of the three wooden chalets. Pierre and Nichel Neuhauser look after their guests with good local produce: duck foie gras with prunes, salmon trout, stuffed rabbit and wild forest berry dessert. Exquisite eaux-de-vie that are distilled in-house.
